BAKED PARMESAN CHICKEN





CHICKEN PARMESAN RECIPE INGREDIENTS :
  • 1/2 cup all purpose flour
  • 1/2 cup parmesan cheese (grated)
  • 2 tsp dried basil leaves
  • 1 tsp dried oregano leaves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic
  • 1/4 cup butter
  • 1/3 cup milk
  • 6 split chicken breasts
CHICKEN PARMESAN RECIPE INSTRUCTIONS
Preheat oven to 400 degrees.

In 13x9in baking pan melt butter in oven. Meanwhile in bowl mix all ingredients exept milk and chicken.

Dip chicken breasts in milk and then coat in flour mixture. Dip chicken in butter then place skin side up in pan. Bake for 45 to 50 minutes or until chicken is fork tender and golden brown.

(Parmesan cheese forms a crunchy coating on this oven-baked chicken.)

  • 2 chicken breasts, halved
  • 2 tbsp. plain flour
  • 1 egg, lightly beaten
  • 1 cup breadcrumbs
  • 1 tbsp. rosemary
  • 1/2 cup grated Parmesan cheese
  • 4 cups chicken stock
CHICKEN PARMESAN RECIPE INSTRUCTIONS
Combine breadcrumbs, rosemary and Parmesan in a medium sized bowl. Dip chicken in flour, then egg, and then coat firmly with breadcrumb mixture.

Pour stock into a wide saucepan and allow to simmer until reduced by half. Add 4-5 tbsp. of flour to thicken. If gravy is too thin, add more flour or cook longer; if gravy is too thick, add more water.

In a skillet sauté chicken in heated olive oil on both sides until golden-brown.

When chicken is brown, firm and cooked through, drain on paper towels. Then, simmer in gravy (the reduced stock), if desired, or serve stock over the chicken.

CHICKEN PARMESAN RECIPE INGREDIENTS
  • 1 1/2 pounds boneless/skinless chicken breasts
  • 1/4 cup breadcrumbs (plain or seasoned)
  • 1/4 cup flour
  • 3 tablespoons olive oil
  • 1 20 oz jar spaghetti sauce
  • 8 oz shredded mozzarella or shredded Parmesan cheese
CHICKEN PARMESAN RECIPE INSTRUCTIONS
In separate bags put breadcrumbs and flour. Cut chicken in the center lenghtwise to make thin and wide chicken breasts. Coat chicken with breadcrumbs by shaking in bag. Remove from bag with breadcrumbs and shake in bag of flour to coat well.

In a large frying pan, pour olive oil to coat bottom of pan. Heat pan over medium heat. Place coated chicken into the hot pan. Brown for 3 minutes on each side.

Wipe pan clean. Return chicken and add spaghetti sauce. Cover and let cook for 30 minutes over low heat. Stir and turn chicken occasionally. Melt cheese over chicken for five minutes.

Serve alone or over noodles.

INGREDIENTS
  • chicken cutlets, thinly sliced
  • tomato sauce
  • mozzarella cheese (either shredded and/or sliced)
  • bread crumbs
  • shredded Parmesan cheese
  • extra virgin olive oil
  • toothpicks
INSTRUCTIONS
Preheat oven to 350 degrees

Lay cutlet flat. Spread approximately 1-2 tbsp. tomato sauce on cutlet. Either lightly sprinkle mozzarella or lay on thin slice of mozzarella on top of sauce.

Roll up cutlet, being careful to not push out sauce or cheese.

Tightly secure cutlet with one or two toothpicks. Lightly baste “chicken roll” with olive oil. Mix breadcrumbs with Parmesan cheese in a 2:1 ratio, respectively.

Coat “chicken roll” with breadcrumb mixture entirely. Place “chicken roll” on baking sheet

Bake at 350 degrees for 40 minutes. Sprinkle extra shredded mozzarella or place a slice of mozzarella on top of each “chicken roll” in the last 10-15 minutes. The chicken parmesan recipe is ready...really yummy !!! Enjoy it !

Ingredients

* 4 (about 4 ounces each) boneless skinless chicken breasts
* 1/2 cup Italian seasoned breadcrumbs
* 1/4 cup grated Parmesan cheese (and can we agree not to use the stuff in the green can?)
* 1/2 teaspoon dried Italian seasoning (or mix some oregano, basil and thyme together)
* Freshly ground pepper
* 1/8 cup reduced fat mayonnaise
* 1 tablespoon olive oil, or as needed
* 8 ounces spaghetti, cooked according to package directions
* 3 cups marinara sauce, either homemade or your favorite prepared sauce, heated
* 1 cup (4 - ounces) part-skim mozzarella cheese, shredded
* Chopped fresh parsley or basil or both, optional


INSTRUCTIONS

1. Place the chicken breasts into a large zip top bag; using a meat mallet (not the pointy tenderizer side, but the flat side) or rolling pin, pound to 1/4 inch thickness.
2. Combine the breadcrumbs, Parmesan cheese, Italian seasonings and pepper in a shallow dish.
3. Split the mayonnaise between each breast and spread it evenly across the top with a spatula or knife. Dredge each chicken breast, mayo side only, in the breadcrumb mixture.
4. Heat the oil in a large non-stick skillet over medium high heat. Place the breast, breaded side down; cook until brown, about 5 minutes; turn and cook the other side until done, about 5 minutes more.
5. Preheat the broiler.
6. Place 1 cup of the cooked spaghetti in each of 4 oven-proof bowls or gratin dishes. Spoon 1/2 cup of the marinara over the spaghetti, top with a chicken breast then another 1/4 cup of sauce. Top with 1/4 cup of the mozzarella cheese.
7. Broil for 3 - 4 minutes, or until the cheese has melted. Garnish with the herbs, if desired. The chicken Parmesan recipe is ready to serve...Enjoy it !

The prep for this dish is easy. Preheat the oven to 350 degrees F.
Next, pound the chicken breasts with a meat mallet until they are approximately 1/4 – 1/2 inch thick.
Have your Parmesan cheese grated and on the ready.

Ingredients

* 1/4 cup extra-virgin olive oil, plus 3 tablespoons
* 1 medium onion, chopped
* 2 garlic cloves, minced
* 2 bay leaves
* 1/2 cup kalamata olives, pitted
* 1/2 bunch fresh basil leaves
* 2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
* Pinch sugar
* Kosher salt and freshly ground black pepper
* 4 skinless, boneless, chicken breasts (about 11/2 pounds)
* 1/2 cup all-purpose flour
* 2 large eggs, lightly beaten
* 1 tablespoon water
* 1 cup dried bread crumbs
* 1 (8-ounce) ball fresh buffalo mozzarella, water drained
* Freshly grated Parmesan
* 1 pound spaghetti pasta, cooked al dente

INSTRUCTIONS

Coat a saute pan with olive oil and place over medium heat. When the oil gets hazy, add the onions, garlic, and bay leaves; cook and stir for 5 minutes until fragrant and soft. Add the olives and some hand-torn basil. Carefully add the tomatoes (nothing splashes like tomatoes), cook and stir until the liquid is cooked down and the sauce is thick, about 15 minutes; season with sugar, salt and pepper. Lower the heat, cover, and keep warm.

Preheat the oven to 450 degrees F.

Get the ingredients together for the chicken so you have a little assembly line. Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/2-inch thick. Put the flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, combine the eggs and water, beat until frothy. Put the bread crumbs on a plate, season with salt and pepper.

Heat 3 tablespoons of olive oil over medium-high flame in a large oven-proof skillet. Lightly dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off, then dredge in the bread crumbs. When the oil is nice and hot, add the cutlets and fry for 4 minutes on each side until golden and crusty, turning once.

Ladle the tomato-olive sauce over the chicken and sprinkle with mozzarella, Parmesan, and basil. Bake the Chicken Parmesan for 15 minutes or until the cheese is bubbly. Serve hot with spaghetti. The chicken parmesan recipe is ready to serve !
